St Huberts the winery was founded in 1862 in Victoria, Australia, by Swiss-Australian writer, artist and winemaking pioneer, Hubert de Castella. It was believed he named the winery not after himself but his patron saint, St Hubert.
Following his instincts, de Castella was one of the first to plant vines in the Yarra Valley region of Victoria, and went on to develop a much-acclaimed range of bold, sophisticated wines. St Huberts The Stag range of wines takes this winemaking philosophy to the world. Through collaboration with likeminded winemakers, St Huberts The Stag offers luxury wines from the great wine regions of the world. The winemakers are given the freedom to follow their instincts in the pursuit of making great wine.
The St. Huberts The Stag Paso Robles Cabernet Sauvignon has a bountiful bouquet with hints of vanilla and sandalwood alongside fragrant red berry fruit aromas. On the palate, ripe brambleberry, blackberry, wild cherry, and dark plum notes sit alongside cinnamon, clove, and mocha spices. Spicier hints of black pepper add complexity, creating depth and balance, with a supple mouthfeel, that is layered and plentiful, finishing with great length and persistence.
Paso Robles enjoys greater day-to-night temperature swings than any other appellation in California. There is great diversity in the region, distinct microclimates, over 45 different soil types, and a long growing season. This makes Paso Robles an optimum region for producing premium wines, in particular Bordeaux varietals like Cabernet Sauvignon, Merlot, Malbec, and Petit Verdot.
Using a modern winemaking approach, the grapes were crushed and fermented an average of seven to 10 days in stainless steel tanks. Pump-overs were gently performed three times a day to extract optimum color and tannin. Post fermentation, a portion of the wine was integrated with French and American oak for up to two years to smooth and round the tannins, and add complexity and depth of flavor. Each of the lots were tasted daily to determine which would be selected for this wine.
