For more than 100 years, Beaulieu Vineyard has been setting the standard for rich, classic Napa Valley wines. Our legacy honors the marriage between state-of-the-art technology and gentle, traditional winemaking methods, a combination that enhances the expression of our remarkable vineyard terroir. Inspired by “the Maestro” himself, famed Beaulieu Vineyard Winemaker Andre Tchelistcheff, these Discovery Series wines allow us to explore the diverse Napa Valley by crafting expressional wines from many of the 16 different American Viticultural Areas nested within the larger Napa Valley AVA.
Expressive layers of juicy black cherry, cassis and black currant character unfold with intriguing nuances of cedar, tobacco leaf and milk chocolate in this dark and flavorful Napa Valley Cabernet Sauvignon. Velvety tannins provide firm structure and rich texture for the mouth filling flavors. Nuances of allspice, cinnamon, and caramel from toasted oak barrels are interwoven throughout, leading to a long mouth-watering finish. This full-bodied, attractive Napa Valley Cabernet Sauvignon is approachable and delicious now, yet promises cellar worthiness. Pair with boldly flavored foods, like cured or smoked meats, juicy steaks; grilled or braised lamb, and barbecued pulled-pork, tri-tip and spareribs.
The 2017 vintage in the Napa Valley was smaller yielding but high in quality. The region enjoyed much needed rain during the winter months ending the drought. A short period of warmer than usual temperatures during Labor Day weekend accelerated harvest for early ripening grapes varieties, resulting in an intense and, at times, unpredictable harvest. Though yields were lower than usual, the wines show exceptional flavor intensity and conditions were perfect for producing a Cabernet with beautiful fruit as well as tremendous concentration of flavors, highly saturated color, and layers of complexity.
We sourced this wine from Cabernet Sauvignon grapes grown in our historic BV Ranch No. 12 estate vineyard, located in Calistoga, the northern most region of Napa Valley. Here, the vines experience dramatic diurnal temperature swings with hot days and very cool evenings, allowing the grapes to ripen to optimal levels. The devotion to farming this historic vineyard gem is rewarded year after year with expressive and richly flavored grapes. The diverse soils and microclimates, as well as the various clones of Cabernet Sauvignon and cultivation techniques, contributed to this wine’s complex flavor profile."
We harvested the fruit for our Cabernet Sauvignon in the cool hours of morning, when sugars and acids were in perfect balance. At the winery, the fruit was destemmed and crushed before being placed into stainless steel tanks for fermentation. In order to retain the individual expressions of each of the vineyards in the blend, each lot is kept separate throughout fermentation and aging. After fermentation the lots were aged in 30% percent new oak barrels for 18 months.
